I need to know how to make a home made muesli without nuts that is suitable for school canteens. Does anyone have any suggestions?

I assume that the muesli is to be served cold with milk or yoghurt. It is actually better to cook muesli as then it is easier to digest and the body doesn't need to work as hard to assimilate the nutrients. If you aren't cooking it though, I would use a combination of rolled oats, toasted sunflower seeds, sultanas and puffed rice. You could also add wheat bran, linseed, diced dried apricot and shredded coconut for a more tropical taste.

Below is a recipe for Toasted Muesli that I know is tasty and is from Rosemary Stanton’s "Healthy Cooking Book".
Bake 750g rolled oats in a moderate oven for approximately 15 minutes until golden brown (stir regularly and watch carefully as they burn quickly). Cool. Toast 1cup coconut flakes and 1/3cup sesame seeds in a dry frying pan, stirring regularly. Cool. Combine rolled oats, coconut, sesame seeds with 250g dried fruit medley, 250g sultanas, 1cup wheatgerm. Store in an airtight container. Why not also try adding 250g barley flakes, ½cup roasted buckwheat, ½cup pepitas, ½cup sunflower seeds
Also why not ask the kids what dried fruits they like and try mixing them through it also.
