Ways To Use Over Ripe Fruit

It’s always a nuisance to have to throw out edible fruit just because it has become a little too ripe. Here are some suggestions for ways to make use of over-ripe fresh fruit.

1. Cut Oranges into 6ths and freeze as a cool treat for a hot day.
2. Grapes can be frozen and enjoyed later as a cold snack on a hot day. 
3. Peel and segment Mandarins and freeze to later put in a fruit salad or sell as frozen treats.
4. Apples can be stewed and served sprinkled with cinnamon for a warm fruit idea in winter or used in muffins. Stewed apple can be frozen and stored until required.
5. Frozen banana – peel over-ripe banana and cut in half.  Insert a pop stick into the cut end of the banana.  Wrap the banana well in cling wrap and freeze.  Serve just like a frozen icy-pole OR
6. Peel ripe banana, cover in cling wrap and freeze.  When frozen cut into bite sized pieces and serve while still frozen.
7. Sweet treat fruit bread toasties with banana - Spread 2 slices of fruit bread lightly with reduced fat margarine. Place spread side down on a heated toasted sandwich maker. Top the bread with 2 tablespoons of the banana (either sliced or mashed), 1 tablespoon of reduced fat ricotta spread and sprinkle with ground ginger and cinnamon. Then top with second slice. Cook until brown.

Lunch Crates

I am looking at replacing our lunch crates. We currently use 28litre plastic 'toy' boxes, but these have a very short life, splitting and breaking very easily.
